North Dakota’s Zucchini Revolution: Beyond the Basics
This past spring, our office manager, Penny, suggested we plant some veggies in the back of our building. She planted tomatoes, cucumbers, and zucchini. While her little garden has produced extremely well, we are now asking the question everyone with a garden asks...are you tired of zucchini yet? It is good, and you can use it in almost everything. For some, zucchini finds its way into every meal. For me, I have had enough!
Anyone who knows Penny knows she is a great cook. She has even been put to the test lately to come up with different ways to cook or bake with it. She started out with the basics...the homemade bread she made was amazing.
Then she got a little fancier and made two types zucchini brownies. OMG, they were to die for! If you stop at the station, be sure to ask her about the s****y brownies she made. She said they were not as good, but they had chocolate...and they were good!
Then she got brave and stepped out of the box a bit with zucchini salsa. I love salsa, but this was a no for me. Others around the building liked it, so you might consider making it.
This is where the big question comes in...what else can you make? There are a bunch of websites out there with the basics. The Pioneer Women website has a bunch of ideas that you may not have thought of. Stuffed, fried, or grilled, you'll find something different to do with all that zucchini!
So, don't say, What the hell do we do with all of this? Say goodbye to zucchini fatigue and hello to a summer filled with exciting flavors and delightful surprises. Remember, these are just suggestions.
